{sweet treat tuesday: brown sugar meringues}



I've posted on meringues before {see HERE}, and it seemed to cause a little stir.  People either love them or hate them. Me?! I love them.  They are addictive.  No guilt though, peeps...the recipe I'm about to show you can be guilt free.  These cookies are a mere 11 calories!!

Ingredients ~

*3 egg whites
*Pinch of salt
*1/2 cup of light brown sugar
*1/2 teaspoon vanilla extract

What to do ~ 

1) Preheat the oven to 225 degrees

2) Line 2 baking trays with parchment paper or silicone sheet

3) In a large standing mixer fitted with a whisk, or a hand-held mixer, beat the egg whites and salt on high speed until soft peaks form.  Add the sugar slowly while beating, a few spoonfuls at a time, until the meringue is stiff and shinny (about 3-5 minutes).  Add the vanilla and beat to combine.

4) Using a large tablespoon, drop the meringue onto the prepared baking sheet in the shape of kisses - about 2 inches apart.  Or cut the corner off a large plastic bag, filled with meringue, and squeeze out the kisses. Bake for about 1 hour and 15 minutes.



5) Turn the oven off and keep the door ajar.  Let cool for 1 hour in the oven.  Store in a tin or wrap loosely in aluminum foil; do not store in plastic wrap or glass or the cookies will become soggy. 




6) Try not to eat all of the meringues in one setting. :)

wow these look perfect, I really want to try the Martha version (of freezing them then browning the tops with a kitchen torch)

style-for-style - that would be great to try! If you do...let me know! I may try that to. It would be interesting to do a taste test. :) The ones I posted aren't the fun snowy white ones...but rather are caramel (ish) in color and taste.

Alison - Thanks! Wish I could have all of you over for a taste. As for the photos - glad they turned out (I've been forced to use my camera phone, ever since our move!)

Kathleen - shame that your mister's not a fan. Mine was definitely shy about it...but, I made him eat one of these and he's now a convert!!

Amanda - I really hope you try the recipe. (A tip...don't add extra brown sugar, etc. Stick to the amounts posted. Otherwise, the flavor is not a soft.) If you make them, send me a picture and I can post it! xx,

I love meringues!! They are one of my favs.... EXCEPT your step 6. that is a no go. ;) should read "EAT ALL" lol

Cute! I should try them-I'm not usually a fan but maybe the fam will be! Standing mixer? Might that be our wedding buddy STEAL? I still use mine w smug satisfaction every time! ;)

I root for team love them. My grandma used to make a chocolate chip version and called them forgotten cookies because she made them before she went to bed, turned off the oven and forgot about them until morning. This version looks delish!

I'm from the "hate them" club!! I love a dense treat!! I would need to eat the whole batch to get a little satisfaction. They sure are pretty though )
